1 1/2 pounds boneless skinless chicken thighs, cut into 1-inch pieces
2 tablespoons soy sauce
1 tablespoon lime juice
1 tablespoon olive oil
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup mayonnaise
2 tablespoons sweet chili sauce
1 tablespoon sriracha
1 teaspoon honey
4–6 wooden or metal skewers
Marinate chicken with soy sauce, lime juice, olive oil, garlic, salt, and pepper for 15–30 minutes.
Preheat grill, skillet, or broiler to medium-high.
Thread chicken onto skewers, leaving small gaps.
