BBQ Salmon with Mango Avocado Salsa Recipe featuring smoky grilled salmon topped with a fresh mango and avocado salsa.

Ingredients

4 salmon fillets skin on
2 tablespoons olive oil
Salt and black pepper to taste
1/2 cup barbecue sauce
1 large ripe mango diced
1 ripe avocado diced
1/4 cup red onion finely chopped
2 tablespoons fresh cilantro chopped
1 tablespoon fresh lime juice
Optional jalapeño finely diced

Instructions

  • Combine mango, avocado, red onion, cilantro, lime juice, and salt in a bowl and chill.

  • Preheat grill to medium heat and oil grates.

  • Brush salmon with olive oil and season with salt and pepper.

  • Grill skin side down 4 to 5 minutes.

  • Flip and brush with barbecue sauce.

  • Grill 3 to 5 more minutes until internal temperature reaches 125°F to 130°F.

  • Rest briefly then top with mango avocado salsa and serve.

Notes

Do not overcook salmon. Add avocado to salsa just before serving for best texture.
