4 slices sourdough bread
2 tablespoons pesto
4 slices mozzarella cheese
2 slices provolone cheese
2 tablespoons butter or olive oil
2 tablespoons grated Parmesan cheese
1 small tomato, sliced (optional)

Instructions

  • Spread pesto evenly on one side of each bread slice.
  • Layer cheese and optional tomato on two slices.
  • Top with remaining bread slices to form sandwiches.
  • Spread butter or oil on the outside of each sandwich.
  • Cook on a skillet over medium heat for 3–4 minutes per side.
  • Flip and continue cooking until bread is golden and cheese is melted.
  • Rest briefly, slice, and serve warm.
