This Brownie Cheesecake Birthday Cake combines a rich, fudgy brownie base with creamy vanilla cheesecake and an optional ganache topping. Perfect for birthdays and celebrations!
Brownie Base:
½ cup melted butter
½ cup granulated sugar
¼ cup brown sugar
2 eggs
1 tsp vanilla extract
½ cup cocoa powder
½ cup flour
¼ tsp salt
½ cup chocolate chips (optional)
Cheesecake Layer:
24 oz cream cheese
1 cup sugar
¾ cup sour cream or cream
3 eggs
2 tsp vanilla
Pinch of salt
Ganache (optional):
½ cup cream
4 oz chocolate
Preheat oven to 325°F. Line 9-inch springform pan.
Make brownie batter and bake 18–20 minutes.
Mix cheesecake ingredients until smooth.
Pour over brownie base and bake 50–60 minutes in water bath.
Cool in oven 1 hour, then chill overnight.
Top with ganache and decorate as desired.
Great for making ahead. Use boxed brownie mix for a shortcut. Store leftovers chilled up to 5 days or freeze for later.
