1 pound boneless, skinless chicken thighs or chicken breasts
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
Juice of 1 lime
8 small corn tortillas
1/2 cup finely chopped white onion
1/2 cup chopped fresh cilantro
Lime wedges for serving
Optional: sliced radishes, diced avocado, or salsa
Mix olive oil, chili powder, cumin, paprika, garlic powder, oregano, salt, pepper, and lime juice. Coat chicken and marinate 15–30 minutes.
Cook chicken in a skillet over medium-high heat for 5–7 minutes per side until cooked through. Rest 5 minutes.
Warm corn tortillas in a skillet for about 30 seconds per side.
Slice chicken into small pieces and place in tortillas.
