¾ cup unsalted butter, melted
1½ cups granulated sugar
2 large eggs
1 tsp vanilla extract
¾ cup all-purpose flour
½ cup cocoa powder
½ tsp salt
½ cup chocolate chunks or chips (optional)
Preheat oven to 350°F. Line an 8×8 pan with parchment.
Melt butter and let cool.
Beat sugar and eggs until pale, about 3–5 mins.
Stir in butter and vanilla.
Sift in flour, cocoa, and salt. Fold until just combined.
Stir in chocolate chunks.
Spread into pan and bake for 28–32 minutes.
Cool completely before slicing.
Store at room temp for 3–4 days or freeze individually. Add espresso powder or nuts for variations.
