These easy cinnamon sugar blondies are chewy, buttery dessert bars infused with fall spice and topped with a crackly cinnamon sugar crust. Made in one bowl with pantry staples, they’re the perfect cozy treat.
1/2 cup unsalted butter, melted
1 cup brown sugar, packed
1 large egg
1 tsp vanilla extract
1 cup all-purpose flour
1 tsp ground cinnamon
1/4 tsp salt
1/2 tsp baking powder (optional)
Cinnamon Sugar Topping:
2 tbsp granulated sugar
1/2 tsp ground cinnamon
Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment.
In a bowl, whisk melted butter and brown sugar. Add egg and vanilla, whisk until smooth.
Stir in flour, cinnamon, salt, and baking powder just until combined.
Spread batter into pan and smooth top.
Mix cinnamon sugar topping and sprinkle evenly over batter.
Bake 22–25 minutes, until edges are set and center is slightly soft.
Cool before slicing into bars.
Store at room temperature up to 4 days. Add nuts or white chocolate chips for variation.
