These easy cinnamon sugar blondies are chewy, buttery dessert bars infused with fall spice and topped with a crackly cinnamon sugar crust. Made in one bowl with pantry staples, they’re the perfect cozy treat.

Ingredients

1/2 cup unsalted butter, melted
1 cup brown sugar, packed
1 large egg
1 tsp vanilla extract
1 cup all-purpose flour
1 tsp ground cinnamon
1/4 tsp salt
1/2 tsp baking powder (optional)

Cinnamon Sugar Topping:
2 tbsp granulated sugar
1/2 tsp ground cinnamon

Instructions

  • Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment.

  • In a bowl, whisk melted butter and brown sugar. Add egg and vanilla, whisk until smooth.

  • Stir in flour, cinnamon, salt, and baking powder just until combined.

  • Spread batter into pan and smooth top.

  • Mix cinnamon sugar topping and sprinkle evenly over batter.

  • Bake 22–25 minutes, until edges are set and center is slightly soft.

  • Cool before slicing into bars.

Notes

Store at room temperature up to 4 days. Add nuts or white chocolate chips for variation.
