Creamy Gnocchi with Spinach and Feta is a comforting yet balanced dinner featuring tender gnocchi tossed in a smooth cream sauce with wilted spinach and tangy feta.

Ingredients

1 pound potato gnocchi
1 tablespoon olive oil or butter
3 cloves garlic, minced
½ cup vegetable broth
1 cup heavy cream
3 cups fresh baby spinach
¾ cup crumbled feta cheese
½ teaspoon salt
¼ teaspoon black pepper
Pinch of red pepper flakes

Instructions

  • Boil gnocchi according to package directions until they float, then drain.

  • Heat olive oil in a skillet and sauté garlic for 30 seconds.

  • Add vegetable broth and simmer 2–3 minutes.

  • Stir in heavy cream and cook until slightly thickened.

  • Add spinach and cook until wilted.

  • Fold in gnocchi and simmer 2–3 minutes.

  • Stir in feta and adjust seasoning before serving.

Notes

Do not overcook gnocchi. Add a splash of broth if the sauce thickens too much.
