A slow cooker chicken dish in a creamy tomato basil sauce, tender and rich, perfect for serving over pasta or rice.

Ingredients

1 1/2 pounds chicken
1 can crushed tomatoes
1/2 cup chicken broth
1/2 cup cream
1 onion
4 cloves garlic
1 teaspoon basil
1 teaspoon oregano
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 cup Parmesan cheese
1 tablespoon olive oil

Instructions

  • Sear chicken lightly in a pan.
  • Transfer to slow cooker.
  • Cook onion and garlic, then add to slow cooker.
  • Add tomatoes, broth, and seasonings.
  • Cook on low for 5–6 hours or high for 3–4 hours.
  • Stir in cream and cheese during the last 30 minutes.
  • Serve with pasta or rice.

Notes

Add cream at the end to keep the sauce smooth. Use thighs for more tender chicken.
