A slow cooker version of chicken piccata with tender chicken in a light lemon and caper sauce, perfect for serving over pasta or rice.

Ingredients

1 1/2 pounds chicken
1 tablespoon olive oil
1/2 cup chicken broth
1/3 cup lemon juice
3 cloves garlic
1/4 cup capers
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon oregano
2 tablespoons butter

Instructions

  • Sear chicken lightly in a pan.
  • Transfer to crockpot.
  • Sauté garlic and deglaze with broth.
  • Add to crockpot with remaining ingredients except butter.
  • Cook on low for 4–5 hours or high for 2–3 hours.
  • Stir in butter at the end.
  • Serve with pasta or rice.

Notes

Adjust lemon juice for taste. Add butter at the end for a smooth sauce.
