Tender slow-cooked beef served on toasted rolls with melted cheese and a rich au jus dipping sauce.

Ingredients

3 pounds beef chuck roast
1 tablespoon olive oil
1 onion
4 cloves garlic
3 cups beef broth
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
1 teaspoon thyme
1/2 teaspoon salt
1/2 teaspoon black pepper
6 rolls
6 slices provolone cheese

Instructions

  • Sear beef on all sides.
  • Transfer to crockpot.
  • Cook onion and garlic, then deglaze with broth.
  • Add to crockpot with remaining ingredients.
  • Cook on low for 8–9 hours or high for 4–5 hours.
  • Shred beef and return to broth.
  • Assemble sandwiches and serve with au jus.

Notes

Toast rolls for better texture. Add cheese and broil briefly for melting.
