These Decadent Brownie Muffins combine the best parts of a rich brownie and a soft muffin — perfectly fudgy inside, with a glossy crackly top that’s impossible to resist.
1/2 cup (1 stick) unsalted butter
6 oz semisweet or bittersweet chocolate, chopped
3/4 cup granulated sugar
1/4 cup brown sugar
2 large eggs
1 tsp vanilla extract
3/4 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1/4 tsp salt
1/2 cup chocolate chips or chunks
Preheat oven to 350°F (175°C). Line or grease a 12-cup muffin pan.
Melt butter and chocolate until smooth; cool slightly.
Whisk sugars, eggs, and vanilla until pale and glossy.
Stir in melted chocolate mixture.
Fold in flour, cocoa, salt, and chocolate chips until just combined.
Divide batter into muffin cups, filling ¾ full.
Bake 18–20 minutes until centers are set but still fudgy. Cool before serving.
