Delicious Irish Potato Pie featuring layers of tender potatoes, onions, cream, and cheddar baked until golden and comforting.

Ingredients

2 1/2 pounds Yukon Gold potatoes thinly sliced
1 large yellow onion thinly sliced
1 1/2 cups heavy cream
2 tablespoons butter plus extra for greasing
1 cup shredded Irish cheddar
1 teaspoon fresh thyme leaves
1 teaspoon salt
1/2 teaspoon black pepper

Instructions

  • Preheat oven to 375°F and grease baking dish.

  • Slice potatoes and onions thinly.

  • Toss potatoes with salt, pepper, and thyme.

  • Layer potatoes, onions, and cheese in dish.

  • Pour cream over layers and dot with butter.

  • Cover and bake 40 minutes.

  • Uncover and bake 20 to 25 minutes until golden and tender.

  • Rest 10 minutes before slicing.

Notes

Allow pie to rest before serving to help layers set.
