2 1/2 pounds Yukon Gold potatoes thinly sliced
1 large yellow onion thinly sliced
1 1/2 cups heavy cream
2 tablespoons butter plus extra for greasing
1 cup shredded Irish cheddar
1 teaspoon fresh thyme leaves
1 teaspoon salt
1/2 teaspoon black pepper
Preheat oven to 375°F and grease baking dish.
Slice potatoes and onions thinly.
Toss potatoes with salt, pepper, and thyme.
Layer potatoes, onions, and cheese in dish.
Pour cream over layers and dot with butter.
Cover and bake 40 minutes.
Uncover and bake 20 to 25 minutes until golden and tender.
Rest 10 minutes before slicing.
Allow pie to rest before serving to help layers set.
