1 1/2 pounds boneless, skinless chicken thighs
2 tablespoons olive oil
2 tablespoons lemon juice
3 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon paprika
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
Mix olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper. Marinate chicken for 30 minutes.
Combine yogurt, cucumber, feta, garlic, lemon juice, dill, and salt to make tzatziki. Refrigerate.
Cook chicken in a skillet or grill pan for 5–7 minutes per side until cooked through. Slice thinly.
Warm pita bread and fill with chicken, lettuce, tomatoes, cucumber, and onion.
Top with feta tzatziki and serve immediately.
Marinate chicken overnight for stronger flavor. Serve with Greek salad or roasted potatoes.
