Juicy Mediterranean-marinated chicken wrapped in warm pita with fresh vegetables and creamy feta tzatziki for a healthy Greek-inspired dinner.

Ingredients

1 1/2 pounds boneless, skinless chicken thighs
2 tablespoons olive oil
2 tablespoons lemon juice
3 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon paprika
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions

  • Mix olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper. Marinate chicken for 30 minutes.

  • Combine yogurt, cucumber, feta, garlic, lemon juice, dill, and salt to make tzatziki. Refrigerate.

  • Cook chicken in a skillet or grill pan for 5–7 minutes per side until cooked through. Slice thinly.

  • Warm pita bread and fill with chicken, lettuce, tomatoes, cucumber, and onion.

  • Top with feta tzatziki and serve immediately.

Notes

Marinate chicken overnight for stronger flavor. Serve with Greek salad or roasted potatoes.
