Ingredients

¾ cup milk
2 large eggs
½ cup brown sugar
⅓ cup vegetable oil
1 cup finely grated carrots
1 cup all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda

¼ teaspoon nutmeg
¼ teaspoon salt

Instructions

  • Preheat oven to 375°F and prepare muffin tin.

  • Soak oats in milk for 5 minutes.

  • Whisk in eggs, brown sugar, and oil.

  • Stir in grated carrots.

  • Add flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

  • Fold gently until combined.
