1 cup rolled oats
¾ cup milk
2 large eggs
½ cup brown sugar
⅓ cup vegetable oil
1 cup finely grated carrots
1 cup all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
1 teaspoon ground cinnamon
¼ teaspoon nutmeg
¼ teaspoon salt
Preheat oven to 375°F and prepare muffin tin.
Soak oats in milk for 5 minutes.
Whisk in eggs, brown sugar, and oil.
Stir in grated carrots.
Add flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
Fold gently until combined.
Divide batter among muffin cups.
Bake 18 to 22 minutes until toothpick comes out clean.
Cool slightly before serving.
Do not overmix the batter.
Add nuts or raisins if desired.
