A rich and comforting casserole combining caramelized onions, tender chicken, creamy orzo, and melted cheese inspired by classic French onion flavors.

Ingredients

2 tablespoons butter
2 tablespoons olive oil
3 large yellow onions, sliced
3 cloves garlic, minced
1 teaspoon thyme
1 teaspoon salt
1/2 teaspoon black pepper
1 pound chicken thighs, cut into pieces
1 cup orzo pasta
2 cups beef broth
1 cup chicken broth
1/2 cup heavy cream
1 cup Gruyère cheese, shredded
1/2 cup mozzarella cheese, shredded

Instructions

  • Cook onions in butter and oil over medium heat until caramelized.
  • Add garlic, thyme, salt, and pepper and cook briefly.
  • Add chicken and cook until lightly browned.
  • Stir in orzo, broth, and cream.
  • Transfer to a baking dish and cover with foil.
  • Bake at 375°F for 25 minutes.
  • Remove foil, add cheese, and bake until melted and golden.

Notes

Take time to caramelize onions properly for best flavor. Add a splash of broth when reheating leftovers to maintain moisture.
