8 ounces pasta (rotini, penne, or bowtie)
1 pint cherry or grape tomatoes, halved
8 ounces fresh mozzarella balls or diced mozzarella
1/4 cup fresh basil leaves, chopped
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar or glaze
1/2 teaspoon salt
1/4 teaspoon black pepper
Optional: 1/4 cup thinly sliced red onion, 1/4 cup sliced black olives
Cook pasta until al dente, drain, and rinse under cold water.
Halve tomatoes, dice mozzarella, chop basil, and prepare optional ingredients.
Combine pasta, tomatoes, mozzarella, basil, and optional ingredients in a large bowl.
Whisk olive oil, balsamic vinegar, salt, and pepper; toss with pasta mixture.
Chill at least 30 minutes before serving; drizzle extra balsamic glaze if desired.
