Fresh pasta tossed with cherry tomatoes, mozzarella, basil, and balsamic dressing for a light, flavorful, and colorful pasta salad.

Ingredients

8 ounces pasta (rotini, penne, or bowtie)
1 pint cherry or grape tomatoes, halved
8 ounces fresh mozzarella balls or diced mozzarella
1/4 cup fresh basil leaves, chopped
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar or glaze
1/2 teaspoon salt
1/4 teaspoon black pepper
Optional: 1/4 cup thinly sliced red onion, 1/4 cup sliced black olives

Instructions

  • Cook pasta until al dente, drain, and rinse under cold water.

  • Halve tomatoes, dice mozzarella, chop basil, and prepare optional ingredients.

  • Combine pasta, tomatoes, mozzarella, basil, and optional ingredients in a large bowl.

  • Whisk olive oil, balsamic vinegar, salt, and pepper; toss with pasta mixture.

  • Chill at least 30 minutes before serving; drizzle extra balsamic glaze if desired.

Notes

Use whole-grain or high-protein pasta for extra nutrition. Add chicken or shrimp for a hearty meal.
