Tender beef bites slow-cooked in a rich garlic butter sauce until melt-in-your-mouth delicious. High in protein, low in carbs, and perfect for a cozy, fuss-free dinner.
2 lbs beef chuck roast or stew meat, cubed
1/4 cup unsalted butter, sliced
5 garlic cloves, minced
1/3 cup low-sodium beef broth
1 tbsp Worcestershire sauce
1½ tsp Italian seasoning
Salt and pepper to taste
1 tbsp olive oil (for optional searing)
Pat beef dry and season with salt and pepper.
(Optional) Sear beef in oil over medium-high heat until browned.
Add beef to slow cooker with butter, garlic, broth, Worcestershire, and seasoning.
Cook on LOW for 6–7 hours or HIGH for 3–4 hours, until tender.
Stir and garnish with parsley before serving.
Add mushrooms or pearl onions in the last 2 hours.
Use cornstarch slurry to thicken sauce if desired.
Serve with mashed potatoes, rice, or veggies.
Store leftovers for 4 days in fridge or freeze up to 3 months.
