Tender beef bites slow-cooked in a rich garlic butter sauce until melt-in-your-mouth delicious. High in protein, low in carbs, and perfect for a cozy, fuss-free dinner.

Ingredients

  • 2 lbs beef chuck roast or stew meat, cubed

  • 1/4 cup unsalted butter, sliced

  • 5 garlic cloves, minced

  • 1/3 cup low-sodium beef broth

  • 1 tbsp Worcestershire sauce

  • 1½ tsp Italian seasoning

  • Salt and pepper to taste

  • 1 tbsp olive oil (for optional searing)

Instructions

  • Pat beef dry and season with salt and pepper.

  • (Optional) Sear beef in oil over medium-high heat until browned.

  • Add beef to slow cooker with butter, garlic, broth, Worcestershire, and seasoning.

  • Cook on LOW for 6–7 hours or HIGH for 3–4 hours, until tender.

  • Stir and garnish with parsley before serving.

Notes

  • Add mushrooms or pearl onions in the last 2 hours.

  • Use cornstarch slurry to thicken sauce if desired.

  • Serve with mashed potatoes, rice, or veggies.

  • Store leftovers for 4 days in fridge or freeze up to 3 months.
