  • 1/2 cup Biscoff cookie butter

  • 1/2 cup brown sugar

  • 1/4 cup granulated sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 cup all-purpose flour

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1/2 cup crushed Biscoff cookies

  • 1/4 cup white chocolate chips (optional)

Instructions

  • Preheat oven to 350°F (175°C). Line and grease an 8×8-inch pan.

  • Melt butter, then stir in cookie butter until smooth. Cool slightly.

  • Whisk in sugars, egg, and vanilla until glossy.

  • Fold in flour, baking powder, and salt until just combined.

  • Stir in crushed cookies and chocolate chips (if using).

  • Pour batter into pan, swirl with extra Biscoff, and bake 20–25 minutes.

  • Cool completely, slice, and enjoy!
