A fresh grilled corn salad with smoky kernels, crisp vegetables, and a light citrus dressing.

Ingredients

4 ears of fresh corn, husked
1 tablespoon olive oil
1 red bell pepper, diced
1/2 red onion, finely chopped
1 cup cherry tomatoes, halved
1/4 cup fresh cilantro or parsley, chopped
1 avocado, diced (optional)
1/4 cup crumbled feta cheese (optional)
Juice of 1 lime
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions

  • Brush corn with oil and grill until lightly charred.
  • Let corn cool, then cut kernels off the cob.
  • Combine corn with vegetables in a bowl.
  • Whisk lime juice, salt, and pepper, then pour over salad.
  • Toss gently and let sit before serving.
