For the Crust:
1 cup graham cracker crumbs
3 tbsp sugar
4 tbsp unsalted butter, melted
For the Cheesecake Filling:
16 oz cream cheese, softened
½ cup granulated sugar
2 large eggs
¼ cup sour cream
1 tsp vanilla extract
Green gel food coloring
For Topping:
Whipped cream
Red heart sprinkle or candy
Optional: red sugar or peppermint pieces
Preheat oven to 325°F. Line muffin tin with paper liners.
Mix crust ingredients. Press ~1 tbsp into each liner. Bake 5 minutes.
Beat cream cheese until smooth. Add sugar, then eggs. Mix in sour cream, vanilla, and food coloring.
Fill cups with batter and bake 16–18 minutes. Cool slowly, then chill 2+ hours.
Top with whipped cream and red heart before serving.
