Festive green mini cheesecakes with a buttery graham cracker crust and whimsical red heart topping — inspired by the Grinch and perfect for Christmas.

For the Crust:

  • 1 cup graham cracker crumbs

  • 3 tbsp sugar

  • 4 tbsp unsalted butter, melted

For the Cheesecake Filling:

  • 16 oz cream cheese, softened

  • ½ cup granulated sugar

  • 2 large eggs

  • ¼ cup sour cream

  • 1 tsp vanilla extract

  • Green gel food coloring

For Topping:

  • Whipped cream

  • Red heart sprinkle or candy

  • Optional: red sugar or peppermint pieces

Instructions

  • Preheat oven to 325°F. Line muffin tin with paper liners.

  • Mix crust ingredients. Press ~1 tbsp into each liner. Bake 5 minutes.

  • Beat cream cheese until smooth. Add sugar, then eggs. Mix in sour cream, vanilla, and food coloring.

  • Fill cups with batter and bake 16–18 minutes. Cool slowly, then chill 2+ hours.

  • Top with whipped cream and red heart before serving.

Notes

Store in fridge up to 5 days or freeze without topping. Great for parties, gifts, or themed movie nights.
