These Grinch Mini Cheesecakes are creamy, festive green bites of joy topped with whipped cream and a red heart sprinkle — perfect for Christmas fun.

Crust

  • 1 cup graham cracker crumbs

  • 2 tbsp sugar

  • 3 tbsp unsalted butter, melted

Filling

  • 16 oz cream cheese, softened

  • ½ cup granulated sugar

  • 2 large eggs

  • ½ cup sour cream

  • 1 tsp vanilla extract

  • Green gel food coloring

Toppings

  • Whipped cream

  • Red heart sprinkles or candies

  • Optional: crushed candy canes or green sanding sugar

Instructions

  • Preheat oven to 325°F. Line muffin tin with paper or silicone liners.

  • Mix graham cracker crumbs, sugar, and melted butter. Press into liners and bake for 5 minutes.

  • Beat cream cheese until smooth. Add sugar, then eggs one at a time. Stir in sour cream, vanilla, and green coloring.

  • Fill liners with batter. Bake 18–22 minutes until set. Cool and chill 4+ hours.

  • Top with whipped cream and heart sprinkles before serving.
