These Grinch Mini Cheesecakes are creamy, festive green bites of joy topped with whipped cream and a red heart sprinkle — perfect for Christmas fun.
Crust
1 cup graham cracker crumbs
2 tbsp sugar
3 tbsp unsalted butter, melted
Filling
16 oz cream cheese, softened
½ cup granulated sugar
2 large eggs
½ cup sour cream
1 tsp vanilla extract
Green gel food coloring
Toppings
Whipped cream
Red heart sprinkles or candies
Optional: crushed candy canes or green sanding sugar
Preheat oven to 325°F. Line muffin tin with paper or silicone liners.
Mix graham cracker crumbs, sugar, and melted butter. Press into liners and bake for 5 minutes.
Beat cream cheese until smooth. Add sugar, then eggs one at a time. Stir in sour cream, vanilla, and green coloring.
Fill liners with batter. Bake 18–22 minutes until set. Cool and chill 4+ hours.
Top with whipped cream and heart sprinkles before serving.
Best chilled overnight.
