Healing Golden Lemon Lentil Soup is a warm and nourishing plant-based soup made with red lentils, turmeric, vegetables, and bright lemon flavor.

Ingredients

1 cup red lentils, rinsed
1 tablespoon olive oil
1 small onion, diced
3 cloves garlic, minced
1 teaspoon grated ginger
1 teaspoon turmeric
½ teaspoon cumin
½ teaspoon salt
¼ teaspoon black pepper
2 carrots, diced
2 celery stalks, diced
6 cups vegetable broth
Juice of 1 lemon
2 tablespoons chopped parsley or cilantro

Instructions

  • Rinse lentils under cold water and set aside.

  • Heat olive oil in a large pot and sauté onion for 4–5 minutes.

  • Add garlic, ginger, turmeric, cumin, salt, and pepper and cook 1 minute.

  • Stir in carrots and celery and cook briefly.

  • Add vegetable broth and lentils and bring to a gentle boil.

  • Reduce heat and simmer about 20 minutes until lentils soften.

  • Stir in lemon juice and adjust seasoning.

  • Garnish with parsley before serving.

Notes

Blend part of the soup for a creamier texture if desired.
