These no-bake brownies are rich, fudgy, and naturally sweetened with dates. A simple, healthy dessert that’s gluten-free, vegan, and ready in minutes.

Ingredients

  • 1½ cups Medjool dates, pitted

  • 1½ cups raw walnuts

  • ½ cup almonds (or almond flour)

  • ½ cup unsweetened cocoa powder

  • 1 tsp vanilla extract

  • Pinch of sea salt

  • 1 tbsp maple syrup (optional)

  • ⅓ cup dark chocolate chips (optional)

Instructions

  • Line a loaf or 8×8-inch pan with parchment.

  • Process walnuts and almonds until fine.

  • Add cocoa powder and salt, pulse to combine.

  • Add dates and vanilla; blend until sticky dough forms.

  • Add maple syrup if needed for moisture.

  • Fold in chocolate chips.

  • Press dough firmly into the pan.

  • Chill for 30–60 minutes. Slice and serve.

Notes

Store in fridge for up to 1 week or freeze up to 3 months. Add a ganache topping for extra richness or swirl in nut butter before chilling.
