These no-bake brownies are rich, fudgy, and naturally sweetened with dates. A simple, healthy dessert that’s gluten-free, vegan, and ready in minutes.
1½ cups Medjool dates, pitted
1½ cups raw walnuts
½ cup almonds (or almond flour)
½ cup unsweetened cocoa powder
1 tsp vanilla extract
Pinch of sea salt
1 tbsp maple syrup (optional)
⅓ cup dark chocolate chips (optional)
Line a loaf or 8×8-inch pan with parchment.
Process walnuts and almonds until fine.
Add cocoa powder and salt, pulse to combine.
Add dates and vanilla; blend until sticky dough forms.
Add maple syrup if needed for moisture.
Fold in chocolate chips.
Press dough firmly into the pan.
Chill for 30–60 minutes. Slice and serve.
Store in fridge for up to 1 week or freeze up to 3 months. Add a ganache topping for extra richness or swirl in nut butter before chilling.
