1 pound flank steak or skirt steak
3 tablespoons olive oil, divided
3 cloves garlic, minced
Juice of 2 limes
1/2 teaspoon salt
1/4 teaspoon freshly cracked black pepper
1/4 cup chopped fresh cilantro
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 small red onion, sliced
1 cup corn kernels (fresh, canned, or frozen)
2 cups cooked rice or cauliflower rice
Optional toppings: sliced avocado, black beans, shredded cheese, sour cream, extra cilantro
Marinate steak with 2 tbsp olive oil, garlic, lime juice, salt, pepper, and half the cilantro for 20 min–2 hrs.
Sauté bell peppers, onion, and corn in 1 tbsp olive oil until tender-crisp.
Cook steak on high heat 3–5 min per side; rest 5–10 min.
Slice steak thinly against the grain.
