1 pound boneless, skinless chicken breast, cooked and shredded
1/2 cup BBQ sauce, plus extra for brushing
1 medium red onion, thinly sliced
2 tablespoons olive oil
1 pre-made pizza dough (12–14 inches)
1 1/2 cups shredded mozzarella cheese
1/2 cup shredded cheddar cheese (optional)
1/4 cup fresh cilantro leaves, chopped
Salt and black pepper, to taste
Optional toppings: sliced jalapeños, red pepper flakes, or smoked paprika
Preheat oven to 475°F (245°C) with pizza stone or baking sheet inside.
Caramelize onions in olive oil over medium-low heat 20–25 minutes until golden.
Toss chicken with 1/2 cup BBQ sauce; season with salt and pepper.
Roll out dough and place on parchment paper.
Brush dough with BBQ sauce, sprinkle cheese, chicken, and onions evenly.
