Homemade BBQ Chicken Pizza with Caramelized Onions and Fresh Cilantro is smoky, sweet, and fresh with gooey cheese and crisp crust.

Ingredients

1 pound boneless, skinless chicken breast, cooked and shredded
1/2 cup BBQ sauce, plus extra for brushing
1 medium red onion, thinly sliced
2 tablespoons olive oil
1 pre-made pizza dough (1214 inches)
1 1/2 cups shredded mozzarella cheese
1/2 cup shredded cheddar cheese (optional)
1/4 cup fresh cilantro leaves, chopped
Salt and black pepper, to taste
Optional toppings: sliced jalapeños, red pepper flakes, or smoked paprika

Instructions

  • Preheat oven to 475°F (245°C) with pizza stone or baking sheet inside.

  • Caramelize onions in olive oil over medium-low heat 20–25 minutes until golden.

  • Toss chicken with 1/2 cup BBQ sauce; season with salt and pepper.

  • Roll out dough and place on parchment paper.

  • Brush dough with BBQ sauce, sprinkle cheese, chicken, and onions evenly.

  • Bake 12–15 minutes until crust is golden and cheese bubbly.

  • Top with fresh cilantro and optional toppings. Serve hot.
