Sweet and smoky honey BBQ chicken served with crispy garlic Parmesan roasted potatoes.

Ingredients

4 boneless, skinless chicken thighs or breasts
1/2 cup barbecue sauce
2 tablespoons honey
1 tablespoon olive oil
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper

1 1/2 pounds baby potatoes, halved
3 tablespoons olive oil
3 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/3 cup grated Parmesan cheese
2 tablespoons fresh parsley, chopped

Instructions

  • Preheat oven to 400°F (200°C).
  • Toss potatoes with oil, garlic, and seasoning, then roast.
  • Mix BBQ sauce, honey, and spices for chicken.
  • Coat chicken and add to baking sheet.
  • Bake until chicken is cooked and potatoes are golden.
  • Sprinkle Parmesan on potatoes near the end.
  • Rest chicken briefly and garnish potatoes with parsley.
