2 pounds potatoes, peeled and chopped
3 tablespoons butter
1 small onion, finely chopped
¼ cup milk or cream
2 tablespoons chopped parsley
1 teaspoon fresh thyme leaves
1 teaspoon salt
½ teaspoon black pepper
Boil potatoes in salted water until fork-tender, about 15–20 minutes.
Drain and mash potatoes until smooth.
Sauté chopped onion in butter until soft and lightly golden.
Mix onions, milk, parsley, thyme, salt, and pepper into the potatoes.
Transfer mixture to a buttered baking dish.
Bake at 375°F for 20–25 minutes until lightly golden.
Rest briefly before serving.
