Irish Potato Stuffing is a comforting side dish made with creamy mashed potatoes, sautéed onions, butter, and herbs baked until lightly golden.

Ingredients

2 pounds potatoes, peeled and chopped
3 tablespoons butter
1 small onion, finely chopped
¼ cup milk or cream
2 tablespoons chopped parsley
1 teaspoon fresh thyme leaves
1 teaspoon salt
½ teaspoon black pepper

Instructions

  • Boil potatoes in salted water until fork-tender, about 15–20 minutes.

  • Drain and mash potatoes until smooth.

  • Sauté chopped onion in butter until soft and lightly golden.

  • Mix onions, milk, parsley, thyme, salt, and pepper into the potatoes.

  • Transfer mixture to a buttered baking dish.

  • Bake at 375°F for 20–25 minutes until lightly golden.

  • Rest briefly before serving.

Notes

Avoid adding too much liquid to maintain the stuffing’s thick texture.
