2 tablespoons olive oil
1 pound chicken
1 onion
3 cloves garlic
1 tablespoon butter
1 cup heavy cream
1/2 cup Parmesan
1 lemon (zest and juice)
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon red pepper flakes
2 cups spinach
1/4 cup pasta water

Instructions

  • Cook gnocchi until they float and set aside.
  • Cook chicken in olive oil until done, then remove.
  • Sauté onion and garlic, then add butter.
  • Stir in cream and warm gently.
  • Add Parmesan, lemon zest, and juice.
  • Return chicken and gnocchi to pan.
