A creamy and refreshing pasta dish made with ricotta, lemon, and tender spinach for a light yet satisfying meal.

Ingredients

12 ounces spaghetti or fettuccine
1 cup ricotta cheese
2 tablespoons olive oil
3 cloves garlic, minced
4 cups fresh spinach
1 lemon, zested and juiced
1/2 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1/3 cup pasta water
1 tablespoon butter
1/4 teaspoon red pepper flakes

Instructions

  • Cook pasta in salted boiling water until al dente and reserve pasta water.
  • Mix ricotta, lemon zest, lemon juice, salt, and pepper in a bowl.
  • Heat olive oil and sauté garlic until fragrant.
  • Add spinach and cook until wilted.
  • Add cooked pasta to the skillet and toss.
  • Stir in ricotta mixture and pasta water gradually.
  • Add Parmesan and butter, mixing until creamy.
  • Adjust seasoning and serve warm.

Notes

Keep heat low when adding ricotta for smooth texture.
Adjust lemon to taste.
