1 lb lean ground beef
1 tbsp olive oil
1 onion, chopped
2 garlic cloves, minced
2 carrots, sliced
2 celery stalks, chopped
2 medium potatoes, diced
1 (14.5 oz) can diced tomatoes
2 tbsp tomato paste
6 cups beef broth
1 tsp Worcestershire sauce
1 tsp Italian seasoning
1/2 tsp salt
1/2 tsp black pepper
1 cup frozen corn
1 cup frozen green beans
In a large pot, heat olive oil and brown ground beef. Add onion and garlic; cook until fragrant.
Stir in carrots, celery, and potatoes; cook 5 minutes.
Add tomatoes, tomato paste, broth, and seasonings. Bring to a boil.
Reduce heat and simmer 25–30 minutes until vegetables are tender.
