This Loaded Hamburger Vegetable Soup is a hearty, one-pot meal packed with ground beef, tender vegetables, and a rich tomato broth — a family favorite that’s ready in under an hour!

  • 1 lb lean ground beef

  • 1 tbsp olive oil

  • 1 onion, chopped

  • 2 garlic cloves, minced

  • 2 carrots, sliced

  • 2 celery stalks, chopped

  • 2 medium potatoes, diced

  • 1 (14.5 oz) can diced tomatoes

  • 2 tbsp tomato paste

  • 6 cups beef broth

  • 1 tsp Worcestershire sauce

  • 1 tsp Italian seasoning

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1 cup frozen corn

  • 1 cup frozen green beans

Instructions

  • In a large pot, heat olive oil and brown ground beef. Add onion and garlic; cook until fragrant.

  • Stir in carrots, celery, and potatoes; cook 5 minutes.

  • Add tomatoes, tomato paste, broth, and seasonings. Bring to a boil.

  • Reduce heat and simmer 25–30 minutes until vegetables are tender.

  • Stir in corn and green beans; cook 5 minutes. Adjust seasoning and serve hot.
