Loaded Potato Taco Bowl is a hearty meal featuring crispy roasted potatoes topped with seasoned taco meat, beans, corn, cheese, and fresh toppings.
4 medium russet potatoes, cubed
2 tablespoons olive oil
1 teaspoon salt
1 pound ground beef or turkey
2 tablespoons taco seasoning
¼ cup water
1 cup black beans, drained and rinsed
1 cup corn kernels
1 cup shredded cheddar cheese
1 cup diced tomatoes
1 cup shredded lettuce
½ cup sour cream or Greek yogurt
1 avocado, sliced
Chopped cilantro for garnish
Preheat oven to 425°F and line a baking sheet.
Toss potatoes with olive oil and salt; roast 25–30 minutes until golden.
Brown ground meat in a skillet over medium heat.
Stir in taco seasoning and water; simmer until thickened.
Warm beans and corn.
Assemble bowls with potatoes, meat, beans, corn, and cheese.
Top with tomatoes, lettuce, sour cream, avocado, and cilantro.
