Mediterranean Quesadillas with Spinach, Feta, Mozzarella, and Red Onion combine creamy cheese, tender spinach, and crisp tortillas for a flavorful and satisfying lunch.
4 large flour tortillas
2 cups fresh baby spinach
1 cup shredded mozzarella cheese
½ cup crumbled feta cheese
¼ small red onion, thinly sliced
1 tablespoon olive oil
½ teaspoon dried oregano
Pinch of salt and black pepper
Heat olive oil in a skillet over medium heat.
Wilt spinach for 1–2 minutes and remove from skillet.
Layer mozzarella, spinach, feta, and red onion on half of each tortilla.
Fold tortillas in half and cook 2–3 minutes per side until golden and melted.
Rest briefly, slice into wedges, and serve.
Do not overfill tortillas. Use moderate heat for even melting and crisping.
