Mediterranean Quesadillas with Spinach, Feta, Mozzarella, and Red Onion combine creamy cheese, tender spinach, and crisp tortillas for a flavorful and satisfying lunch.

Ingredients

4 large flour tortillas
2 cups fresh baby spinach
1 cup shredded mozzarella cheese
½ cup crumbled feta cheese
¼ small red onion, thinly sliced
1 tablespoon olive oil
½ teaspoon dried oregano
Pinch of salt and black pepper

Instructions

  • Heat olive oil in a skillet over medium heat.

  • Wilt spinach for 1–2 minutes and remove from skillet.

  • Layer mozzarella, spinach, feta, and red onion on half of each tortilla.

  • Fold tortillas in half and cook 2–3 minutes per side until golden and melted.

  • Rest briefly, slice into wedges, and serve.

Notes

Do not overfill tortillas. Use moderate heat for even melting and crisping.
