Mediterranean Quesadillas with Spinach, Feta, Mozzarella, and Red Onion featuring crispy tortillas filled with melty cheese and fresh vegetables.

Ingredients

4 large flour tortillas
1 cup fresh spinach chopped
1/2 cup shredded mozzarella cheese
1/2 cup feta cheese crumbled
1/4 cup red onion thinly sliced
2 tablespoons olive oil

Instructions

  • Heat olive oil in a skillet over medium heat.

  • Place tortilla in skillet and sprinkle mozzarella on half.

  • Add spinach, red onion, and feta.

  • Fold tortilla in half and cook 2 to 3 minutes per side.

  • Remove when golden and cheese is melted.

  • Slice into wedges and serve warm.

Notes

Brush tortilla lightly with olive oil for extra crispness. Add grilled chicken for extra protein.
