1 1/2 cups pitted Medjool dates
3/4 cup almond flour
1/2 cup unsweetened cocoa powder
1/4 cup natural peanut butter
1 tablespoon maple syrup optional
1 teaspoon vanilla extract
Pinch of salt
1/3 cup dark chocolate for topping optional
Line an 8×8-inch pan with parchment paper.
Process dates into a sticky paste.
Add almond flour, cocoa powder, peanut butter, maple syrup, vanilla, and salt.
Blend until thick and cohesive.
Press mixture firmly into prepared pan.
Spread melted chocolate on top if desired.
Refrigerate at least 1 hour before slicing.
Soften firm dates by soaking briefly in warm water. Store refrigerated for best texture.
