One-Pot Lasagna Soup is a hearty and comforting dish that transforms classic lasagna flavors into a rich, tomato-based soup with tender noodles and melted cheese.

1 tablespoon olive oil
1 pound ground beef or sausage
1 small onion, chopped
3 cloves garlic, minced
2 tablespoons tomato paste
1 can crushed tomatoes (28 oz)
4 cups broth
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes
8 lasagna noodles, broken
1/2 cup ricotta
1 cup mozzarella
1/4 cup Parmesan
2 tablespoons fresh herbs

Instructions

  • Heat oil and cook meat until browned.
  • Add onion and cook until soft, then add garlic and tomato paste.
  • Stir in tomatoes, broth, and seasonings.
  • Simmer for 10 minutes.

Notes
