Brownie Layer:
½ cup (115g) unsalted butter, melted
1 cup (200g) granulated sugar
2 large eggs
1 tsp vanilla extract
⅓ cup (30g) unsweetened cocoa powder
½ cup (65g) all-purpose flour
¼ tsp salt
Cookie Dough Layer:
½ cup (115g) unsalted butter, softened
¼ cup (50g) brown sugar
¼ cup (50g) granulated sugar
1 large egg
1 tsp vanilla extract
1¼ cups (160g) all-purpose flour
½ tsp baking soda
¼ tsp salt
¾ cup (130g) semi-sweet chocolate chips
Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment.
Mix brownie ingredients in one bowl and cookie dough in another.
Spread brownie batter evenly in pan.
Drop cookie dough over top and lightly press.
Bake 25–30 minutes until set around edges and slightly soft in center.
Cool completely before cutting.
Chill before slicing for clean bars.
Freeze up to 2 months.
