A comforting slow cooker dish with tender beef, rich broth, and soft ramen noodles infused with garlic and ginger.

Ingredients

1.5 pounds beef chuck, cut into bite-sized pieces
6 cups beef broth
2 tablespoons soy sauce
1 tablespoon sesame oil
4 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 small onion, sliced
1 teaspoon salt
1/2 teaspoon black pepper
1 cup mushrooms, sliced
2 packs ramen noodles (discard seasoning)
2 cups spinach or bok choy
2 green onions, sliced
1 tablespoon olive oil

Instructions

  • Season and sear beef until browned.
  • Add beef to slow cooker with onion, garlic, and ginger.
  • Pour in broth, soy sauce, and sesame oil.
  • Add mushrooms and cook on low for 6–7 hours or high for 3–4 hours.
  • Add ramen noodles in the last 20–30 minutes.
  • Stir in greens during the final 10 minutes.
  • Garnish with green onions and serve hot.

Notes

Add noodles at the end to prevent overcooking. Adjust seasoning to taste. Great with added chili oil or soft-boiled eggs.
