Ingredients

1.5 pounds chicken thighs or breasts
1 cup cherry tomatoes
1/2 cup kalamata olives
1 small onion, sliced
4 cloves garlic, minced
1/2 cup chicken broth
2 tablespoons olive oil
1 teaspoon oregano
1/2 teaspoon thyme
1/2 teaspoon basil
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon lemon juice
2 tablespoons parsley

Instructions

  • Add onions and tomatoes to slow cooker.
  • Season chicken and place on top.
  • Add olives, garlic, broth, and oil.
  • Cook on low for 5–6 hours or high for 3–4 hours.
  • Add lemon juice before serving.
  • Garnish with parsley and serve.

Notes
