These no-bake s’mores marshmallow truffles are creamy, chocolatey, and packed with graham cracker and marshmallow goodness. A fun twist on classic s’mores, no fire required.
8 oz cream cheese, softened
1/2 cup powdered sugar
1/2 teaspoon vanilla extract
1 1/4 cups graham cracker crumbs
1 cup mini marshmallows or 3/4 cup marshmallow creme
1 1/2 cups semi-sweet or milk chocolate chips (for coating)
Extra graham cracker crumbs for topping
Beat cream cheese until smooth. Add sugar and vanilla, mix well.
Stir in graham crumbs and marshmallows or marshmallow creme.
Chill mixture for 30–45 minutes until firm.
Roll into 1-inch balls and freeze for 20–30 minutes.
Melt chocolate chips in microwave until smooth.
Dip each ball in chocolate, tap off excess, and place on parchment.
Sprinkle with graham crumbs.
Chill until set. Store in fridge.
Use toasted marshmallows for added depth. Roll in cocoa or graham crumbs instead of dipping for a quicker version.
