Snow Globe Cheesecake Bites are mini cheesecakes topped with crystal-clear gelatin domes holding festive edible decorations. Creamy, whimsical, and perfect for winter celebrations.

Ingredients

For the crust:
1 cup graham cracker crumbs
3 tbsp unsalted butter, melted
1 tbsp sugar

For the cheesecake:
16 oz cream cheese, softened
½ cup granulated sugar
1 large egg
¼ cup sour cream
1 tsp vanilla extract

For the gelatin domes:
2 tbsp unflavored gelatin
½ cup cold water
1 ½ cups hot water
1 tbsp sugar
1 tsp vanilla extract (optional)
Edible decorations (cranberries, mint, glitter, etc.)

Instructions

  • Preheat oven to 325°F (163°C). Line mini muffin tin with liners.

  • Mix crust ingredients, press into cups, and bake for 5–7 mins. Cool.

  • Beat cream cheese and sugar. Add egg, sour cream, and vanilla.

  • Fill cups and bake 15–18 mins. Cool completely, then chill 2+ hours.

  • Bloom gelatin in cold water. Add hot water, sugar, and vanilla. Cool.

  • Pour into molds with decorations. Chill until set.

  • Top each cheesecake with a gelatin dome. Chill until ready to serve.

Notes

Use silicone molds for easy dome removal. Assemble shortly before serving for best presentation.
