Snow Globe Cheesecake Bites are mini cheesecakes topped with crystal-clear gelatin domes holding festive edible decorations. Creamy, whimsical, and perfect for winter celebrations.
For the crust:
1 cup graham cracker crumbs
3 tbsp unsalted butter, melted
1 tbsp sugar
For the cheesecake:
16 oz cream cheese, softened
½ cup granulated sugar
1 large egg
¼ cup sour cream
1 tsp vanilla extract
For the gelatin domes:
2 tbsp unflavored gelatin
½ cup cold water
1 ½ cups hot water
1 tbsp sugar
1 tsp vanilla extract (optional)
Edible decorations (cranberries, mint, glitter, etc.)
Preheat oven to 325°F (163°C). Line mini muffin tin with liners.
Mix crust ingredients, press into cups, and bake for 5–7 mins. Cool.
Beat cream cheese and sugar. Add egg, sour cream, and vanilla.
Fill cups and bake 15–18 mins. Cool completely, then chill 2+ hours.
Bloom gelatin in cold water. Add hot water, sugar, and vanilla. Cool.
Pour into molds with decorations. Chill until set.
Top each cheesecake with a gelatin dome. Chill until ready to serve.
Use silicone molds for easy dome removal. Assemble shortly before serving for best presentation.
