Strawberry Earthquake Cake is a gooey strawberry cake layered with sweet cream cheese swirls, white chocolate chips, and optional coconut for a rich and colorful dessert.

1 box strawberry cake mix plus ingredients listed on box
1 cup shredded sweetened coconut optional
8 ounces cream cheese softened
½ cup unsalted butter melted
2 cups powdered sugar
1 cup white chocolate chips
½ cup chopped pecans optional

Instructions

  • Preheat oven to 350°F and grease 9×13 pan.

  • Prepare strawberry cake batter according to package directions.

  • Sprinkle coconut in bottom of pan if using.

  • Pour cake batter evenly over coconut.

  • Beat cream cheese and butter until smooth.

  • Mix in powdered sugar until creamy.

  • Drop spoonfuls over batter and swirl gently.

  • Sprinkle white chocolate chips and pecans on top.

  • Bake 40 to 45 minutes until edges are set.

  • Cool before slicing and serving.

Notes

Center should remain slightly gooey.
Do not overmix cream cheese layer into batter.
