Taco Ranch Bites are cheesy, savory mini hand pies filled with seasoned beef, ranch-spiced cream cheese, and melty cheddar—perfect for parties, snacks, or game day.
1 lb ground beef
1 tbsp taco seasoning
1/4 cup water
4 oz cream cheese, softened
1 cup shredded cheddar cheese
1 tbsp dry ranch seasoning
2 green onions, chopped
1 can refrigerated crescent roll dough or biscuit dough
1–2 tbsp chopped jalapeños (optional)
Melted butter for brushing tops (optional)
Brown ground beef in skillet. Drain fat, add taco seasoning and water. Simmer 2–3 minutes.
Transfer to bowl. Mix in cream cheese, cheddar, ranch seasoning, green onions, and jalapeños if using.
Unroll dough and cut into 3-inch squares or flatten biscuits into circles.
Place 1 tbsp filling in center. Fold over and seal edges tightly. Crimp with fork.
Place on parchment-lined baking sheet. Brush tops with melted butter.
Bake at 375°F for 12–15 minutes until golden.
Cool slightly before serving. Serve with salsa or ranch for dipping.
