2 cups crushed ladyfingers (about 20 cookies)
8 oz mascarpone cheese, softened
⅓ cup powdered sugar
1 tbsp brewed espresso or strong coffee
1 tbsp coffee liqueur (optional)
1 tsp vanilla extract
Unsweetened cocoa powder or melted chocolate for coating
Crush ladyfingers into fine crumbs.
Beat mascarpone, sugar, espresso, liqueur, and vanilla until smooth.
Mix in crumbs to form a soft dough.
Roll into 1-inch balls and place on parchment-lined tray.
Coat in cocoa powder or dip in melted chocolate.
Chill for 1 hour before serving.
Store in fridge for up to 5 days.
For kid-friendly version, omit coffee liqueur. Adjust sugar to taste depending on the sweetness of your cookies.
