Brownies:
½ cup unsalted butter (melted)
¾ cup granulated sugar
¼ cup brown sugar
2 large eggs
1½ tsp vanilla extract
½ cup unsweetened cocoa powder
½ cup all-purpose flour
¼ tsp salt
½ tsp espresso powder (optional)
Topping:
2½ cups mini marshmallows
Preheat oven to 350°F. Line and grease an 8×8-inch pan.
Whisk butter and sugars until smooth. Add eggs and vanilla; whisk until glossy.
Sift in cocoa, flour, salt, and espresso powder. Fold gently until just combined.
Spread batter evenly in pan and bake 22–25 minutes until set.
Remove from oven, sprinkle marshmallows on top, and return to bake 3–5 more minutes.
Optional: Broil for 30 seconds for a toasted top.
Cool completely before slicing.
Chill before cutting for clean slices.
Add a ganache drizzle or chopped nuts for texture.
Store at room temp 2–3 days or freeze for longer.
