Festive, no-bake mini cheesecakes with a buttery crust, creamy filling, and clear gelatin domes for a snow globe effect. Perfect for Christmas parties and winter gatherings.
Crust:
1½ cups graham cracker crumbs
6 tbsp melted butter
1 tbsp brown sugar (optional)
Filling:
12 oz cream cheese, softened
½ cup powdered sugar
¾ cup heavy cream
1 tsp vanilla extract
1 tbsp lemon juice (optional)
Gelatin Domes:
2 packets unflavored gelatin
½ cup cold water (to bloom)
1½ cups warm distilled water
Garnishes: cranberries, rosemary, edible glitter, fondant decorations
Bloom gelatin in ½ cup cold water. Melt and mix with warm distilled water.
Pour into semi-sphere molds and chill until set.
Mix crust ingredients. Press into lined muffin tins or silicone molds. Chill.
Whip cream to soft peaks. In another bowl, beat cream cheese, sugar, vanilla, and lemon.
Fold whipped cream into cream cheese mixture. Pipe onto crusts. Chill 2+ hours.
Top each with garnish and gently place gelatin dome over each.
Keep chilled until ready to serve.
