Chickpea Feta Avocado Salad is a fresh, protein-rich, vegan-friendly salad combining chickpeas, creamy avocado, tangy feta, and crisp vegetables with a zesty lemon vinaigrette.
1 can (15 oz) chickpeas, drained and rinsed
1 large ripe avocado, diced
1/2 cup crumbled feta cheese
1 cup cherry tomatoes, halved
1/2 cucumber, diced
1/4 red onion, thinly sliced
1/2 red bell pepper, diced
2 tablespoons chopped fresh parsley or cilantro
3 tablespoons extra virgin olive oil
1 tablespoon fresh lemon juice
1 teaspoon Dijon mustard
1 clove garlic, minced
Salt and freshly cracked black pepper, to taste
Optional: 1/4 teaspoon smoked paprika or red pepper flakes
Dice vegetables and set aside.
Drain and rinse chickpeas, pat dry.
Combine chickpeas, vegetables, avocado, feta, and herbs in a bowl.
Whisk dressing ingredients and toss gently with salad.
Let sit 5–10 minutes, then serve.
