A creamy and hearty Italian-inspired soup with sausage, potatoes, and kale.

Ingredients

1 pound Italian sausage
4 cups chicken broth
3 cups water
4 medium russet potatoes, thinly sliced
1 small onion, chopped
3 cloves garlic, minced
2 cups chopped kale
1 cup heavy cream
1/2 teaspoon crushed red pepper flakes
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Cook sausage until browned, breaking it into crumbles.
  • Add onion and cook until soft, then stir in garlic.
  • Pour in broth and water, then add potatoes.
  • Simmer until potatoes are tender, about 15–20 minutes.
  • Add kale and cook for 5 minutes.
  • Stir in cream and seasonings.
  • Simmer gently for 5 minutes and serve hot.

Notes

Use mild or spicy sausage based on preference.
Do not boil after adding cream.
Adjust seasoning to taste.
